ml) of water to the large pot, covered with lid; heat on high heat
for about 1 to 1 ½ mins, water temperature should reach between
145-155F (62-65); remove from heat, keep the lid onn2. In a mixing
bowl, add yeast, salt, sugar and warm tap water; stir with a
whisker until all dissolvedn3. Add flour; stir with spatula until
water is absorbed then use hand to scrape and squeeze to make sure
the dough is hydrated and all stick together to form a balln4.
Place the mixing bowl and the dough in the warm pot then recover
immediately; let proof for 45 minutes up to 1 hours (this depends
on environment differences in our homes but try with 45 minutes
first on your first try); the dough should at least double in size
after the proofingn5. Grease the bread pan with cooking spray or
oil/buttern6. Flour a clean surface, and your hands; scrape the
dough onto the surface; pat the dough down with your floured hands
then stretch it out to a rectangle shape about 12 inch long and 8
inch (30×20 cm) wide (the short side facing you) then roll it to a
log from the long side. Make sure the seam side stay in the bottom
then turn the log so the short side faces you again. Now, use both
hands press the dough down then pull and stretch the short side out
to make a new rectangle that is about 12 X 7 inch (30×17 cm), try
to pat/press/stretch the dough to make it relatively even. Now,
start from the long side, fold the dough in, leaving about 1/3 left
then fold that third section over on top of the first fold. Now, we
pinch the seam to seal and also on the side. Roll/pull, try to make
the dough looks relatively even then we transfer the dough to the
bread pan with the seam side stay in the bottom n7. Spray the
dough with water to keep the top moist. Use the lid of the pan to
cover the bread pan and let the though rest for 30 minutes (up to
40 minutes)n8. After 30 minutes, remove the lid and re-spray the
dough with water on top. Boil 2 cups (473ml) of water (about 3
minutes in microwave) then pour it to a pan placed in the bottom
rack of the oven. Preheat oven to 375F (190C) but leave it there 15
minutes before bakingn9. Adjust second rack to the middle of the
oven; if the dough looks dry on top, spray it with water again the
place the bread pan on the middle rack; once the dough risen to the
desired bread size (which is should be now) bake for 25 to 30
minutes or until internal temperature reaches 195-200F
(90-93C)n10. Remove from the pan and let cool on cooling rack for
10 minutes before serving; let cool down completely before storing.
