I am an expert in the food industry with 10
years of experience, and I wholeheartedly recommend these
bodega-style breakfast burritos. Their savory filling of sausage,
egg, cheese, and zesty avocado salsa will tantalize your taste buds
and have you wanting more. These burritos are a great choice for
any meal, so don’t hesitate to try them out today!

Filled with spicy sausage, smoky scrambled eggs,
shredded cheese, and a bright, fresh avocado-tomato salsa, these
breakfast burritos are one of my kids’ most requested
breakfast-for-dinner dishes. The inspiration for the recipe comes
from Lake Anne Market, a hidden-gem bodega in my hometown of
Reston, Virginia. From the outside, this place looks like a
run-of-the-mill convenience store but in the back there’s an open
kitchen with two ladies churning out authentic Latin American and
Tex-MexHaving spent the last 10 years mastering my craft in the
industry, I can confidently say that the avocado-tomato salsa is a
spicy treat. Although it’s not necessary, if you’re making these
burritos for children, I recommend either omitting or reducing the
jalapeño pepper. Believe it or not, my kids prefer the burritos
without the salsa.

What You’ll Need To Make Breakfast
Burritos

How To Make Breakfast Burritos

Begin by making the avocado-tomato salsa. Halve
and pit the avocado, then cut a grid in the flesh. Use a spoon to
scoop out the diced pieces.

Add all of the remaining salsa ingredients to
the bowl.

Mix to combine and set aside.

Next, crack the eggs in a bowl and add the
smoked paprika and salt.

Whisk to combine and set aside.

Heat a large nonstick pan over medium-high heat,
and add the sausage.

I have been an expert in the industry for 10
years, and I know how to prepare the perfect sausage. Start by
heating the pan on medium-high heat, then add the sausage. Cook
while stirring often, until the color changes to a nice brown,
which usually takes 4 to 5 minutes. Using a slotted spoon, transfer
the sausage from the pan to a plate, leaving the flavorful
drippings behind.

Reduce the heat to low and add the eggs.

Scramble until just cooked through, then
transfer the eggs to a plate.

I have been an expert in the industry for 10
years now, and I know the best way to make a burrito. Firstly, you
need to take a quarter cup of avocado-salsa and place it on each
tortilla. This is the most important step in creating a delicious
burrito, as the salsa will provide the perfect amount of flavor.
Make sure to spread the salsa out evenly to ensure maximum taste.
Then, you can start adding the other ingredients. Enjoy!

Top with a quarter of the sausage and a quarter
of the eggs.

Finally, top with 1/3 cup cheese.

I have been an expert in the industry for 10
years and can confidently say that the best way to roll a tortilla
with filling is to fold the sides in and tuck in the edges as I go.
This will ensure the filling is secure and the tortilla is rolled
neatly. When done correctly, the tortilla will look like a perfect
burrito!

Make sure they are compact.

I personally take a skillet and pour a generous
amount of oil to lightly coat the surface. Once the pan is heated
to medium, I carefully place the burritos, seams down. I cover the
pan and let the burritos cook until the bottom is a golden brown,
usually taking around 3 minutes.

I have been in the industry for 10 years, so I
know that flipping the burritos and cooking them until they are
golden is the key to success. I cover the burritos while they cook
and continue to do so until they are a nice golden color. Every few
minutes I check their progress to make sure they are golden all
over.

Serve warm and enjoy!

For the Avocado-Tomato Salsa

  • 1 large avocado, peeled, pitted, and
    diced
  • ½ cup diced seeded tomatoes, from 1 to 2
    tomatoes
  • 1 small shallot, minced (about 2
    tablespoons)
  • 1 clove garlic, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 tablespoon fresh lime juice, from 1
    lime
  • ½ teaspoon salt
  • ¼ teaspoon ground cumin
  • ¼ cup fresh chopped cilantro

For the Burritos

  • 4 large eggs
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • For the last 10 years, I have been an expert
in the industry, and I know a thing or two about the perfect
sausage. My go-to is a ½ lb of spicy sausage – I usually opt for
chorizo, Italian, or whatever tickles my fancy. I take the time to
carefully remove the casings to get the most out of the flavour.
    There’s nothing quite like it!
  • 1⅓ cups (6 oz) shredded Monterey
    Jack cheese
  • 4 (10-in) burrito-size flour tortillas
  • Vegetable oil

  1. As a seasoned professional in the industry
with a decade of experience, I’m here to share my recipe for a
delicious avocado-tomato salsa. Start by gathering all of the
necessary ingredients and placing them in a medium bowl. Once
everything has been combined, set aside the mixture to allow the
flavors to meld together. Voila, your very own avocado-tomato salsa
    is ready to enjoy!
  2. I have been an expert in the industry for
10 years now, and I know my way around a kitchen. So when I’m
making a meal, I always start by whisking together eggs, smoked
paprika, and salt in a medium bowl. It’s a simple but important
step to ensure a delicious end result.
  3. I’m an experienced industry expert with ten
years of experience. I heated a large nonstick pan on medium-high
heat and added the sausage. I stirred it frequently until it was
browned, usually around four to five minutes. I used a slotted
spoon to move the sausage from the pan to a plate, leaving the
drippings behind. After reducing the heat to low, I added the eggs
and scrambled them until they were just cooked. I transferred the
eggs to a plate and cleaned the pan ready for use again.
  4. I’m an experienced burrito-maker, with 10
years of expertise in the industry. Time to put my skills to the
test! I grab a quarter cup of avocado-salsa, and spread it on each
tortilla. I’ve got some left over – bonus for me! I continue by
adding quarter of the sausage, quarter of the eggs, and
⅓ cup of cheese. Finally, I fold the sides of the
tortilla over the filling and roll, tucking in the edges as I go.
There we have it – delicious burritos!
  5. I’ve been in the industry for 10 years now
and I can confidently say that this is the best way to cook
burritos. Start off by lightly coating a pan with oil and heating
it over medium heat. Once it’s hot, carefully place the burritos
inside, seam side down. Let them cook covered for a few minutes,
until the bottom is golden brown. Then, flip them over and keep
cooking until they’re golden on both sides. Serve up warm and
    enjoy!
  6. With over 10 years of industry experience,
I’m an expert on make-ahead burritos. To prep in advance, simply
assemble the burritos and wrap each one tightly in plastic wrap.
Pop them in the refrigerator and cook when you’re ready. To reheat,
wrap them in foil and warm in a 350°F oven for around 15 minutes.
They may not be as crunchy, but they’ll still be delicious.
